Relying on staff memory
Keep the current allergen information accessible at the point of service. Staff should know where to check and who to ask if a product or specification has changed.
Keep accurate supplier information available wherever customers choose or ask about food.
For unpackaged food, customers may need allergen information before choosing. FSANZ guidance says information for food not required to carry a label can be displayed with the food or provided on request; keep the details tied to the exact product being served.
Use current supplier specifications and follow the Australia New Zealand Food Standards Code and local requirements. Never infer an allergen answer from a product name, appearance or menu category.

Keep labels, menu descriptions and supplier documents matched to the correct item. When a product is substituted, update the display and confirm its information before serving.
The product information needs to reflect the supplier's current declaration and any relevant cross-contact advice. Do not promise an item is safe for an allergy unless the information supports that answer.
Set up a routine for receiving and filing updated specifications. A staff member should be able to locate the current record during service.
The allergen process begins when a product is received and continues through display and service.
